This quick and easy beanless chili recipe is seriously one heavenly dish. Your kids will love this one, and so will their friends!
My daughter’s friend’s mother even emailed me for this recipe because her daughter loved it so much. Sydney brought it for lunch the other day and gave her a taste, and she went home and asked her mom to get the recipe from me!
She made it the other night and they all loved it…proof enough for me that this recipe is a keeper that I just needed to share with all of you!

QUICK + EASY BEANLESS CHILI
I’m all about healthy, home-cooked meals, it’s really important to me to try and cook for my family as often as I can.
I’m always looking for ways to make meals in a simple way that won’t take too much time. This easy beanless chili recipe has a quick prep time but needs to be cooked for a good hour before it’s ready to eat.
So, even though you can make this easily on a weeknight, it’s probably best to cook it the night before you want to serve it, or on the weekend and freeze it ahead of time, if you don’t have the full amount of time to prepare it.
This recipe yields plenty of leftovers for most families, either to serve for another night in the same week, freeze for later, or pack up in lunches the next day.
Here’s a quick tip: I always like to pack the kid’s lunches after dinner so they’re ready to go in the morning.

Ingredients
1/3cupolive oil*extra virgin
1mediumonion*diced
2garlic cloves*minced
3-4lbsground beef*medium
2large canscrushed or pureed tomatoes
1small cantomato paste*if desired, for thicker chili
1/4cupred wine
2tbspdried parsley
2tbspdried oregano
1/3cupchili powder*I sometimes add even more!
2tspsalt*or more, if you're generous with salt
1 tspcracked pepper*I like to use a pepper mill
Instructions
Dice onion and mince garlic. Sautee in olive oil over medium heat, until tender, about 5 minutes.
Add ground beef, and cook thoroughly, about 5-7 minutes.
Add crushed tomatoes and mix well. Add tomato paste, if you like your chili a little thicker. Mix well.
Add red wine and mix well.
Add all dry ingredients and mix well.
Once everything is mixed together and chili begins to cook, turn the heat down to low, and simmer for 1 hour, minimum. You can cook this for 2, or even 3 hours - the longer it cooks, it will be more flavorful and thicker.
Once cooked, top with greek yogurt or sour cream, fresh parsley, and grated cheese. Green onions are also a delicious topping! Add chopped bacon for even more deliciousness!
Recipe Notes
I like to serve this with cheesy ciabatta buns for the kids - simply grate cheese over open bun halves and bake until golden and bubbly.
You can also use 1 tbsp garlic powder if you don't have fresh cloves.
You can easily add beans to this recipe - one 28 oz. can of red kidney beans, drained and rinsed, then add them for the last 20-30 mins of cooking. I personally don't like to cook beans too long, in order to keep them from getting too soft and mushy if overcooked.
This is such a delicious meal and one of our all-time family favorites.
Everyone gets excited when they smell it cooking on the stove! Our kids love to eat it with a side of cheesy baked ciabatta buns (as noted in the recipe above), it’s such a great combo together!
Top it with full-fat Greek yogurt for a different twist on sour cream too…sooooo yummmmy!
