Tomatoes are one of my favorite foods and snacks and I always have them on hand year round. I love any kind! This easy roasted tomato soup is also a favorite for me and my family as well. So simple to make with only a handful of ingredients you definitely have on hand, it will keep you coming back for more time and again. This meal is often on repeat throughout the fall and winter months in our home, when I don’t know what to make for dinner but want something delicious, hearty and full of flavor within an hour or so. Served with my famous – famous in our home that is – homemade, gourmet grilled cheese, made with my rustic artisan bread (you must try it, you’ll thank me later!), of course. It only takes a handful of ingredients to make this easy roasted tomato soup that everyone will love. What I love most about this soup is the rich, robust flavor that you get from roasting the vegetables in the oven. They get caramelized in the process which elevates all the flavors to a whole other level.

WHAT KIND OF TOMATOES ARE USED IN TOMATO SOUP?
I personally love to use vine-ripe tomatoes, or any small tomato, such as cherry or grape. That said, you can absolutely make this recipe with any type of tomatoes you have on hand. If you’re using larger ones, just cut them into large chunks before roasting.

WHAT IS THE ROASTING PROCESS?
Roasting might sound more complex than you think. It’s actually one of the easiest ways to cook vegetables and will always yield much more flavorful results. Roasted veggies of any kind are always so full of depth and rich flavor, as the sugars caramelize and the richness come out.
To roast tomatoes, you simply place your ingredients on a rimmed baking sheet or in a baking dish and cook them at a high temperature (around 400F) in the oven so they get beautifully browned.

You see all those blackened edges and bits pictured below? That’s where all that rich, roasted flavor comes from, when the veggies caramelize. You want to make sure you use enough oil so they don’t stick, and seasonings for enhanced flavor.


WHAT INGREDIENTS ARE USED IN TOMATO SOUP?
Friends, this easy roasted tomato soup recipe is as basic as it gets – tomatoes, whole garlic cloves, onion, olive oil, chicken stock and seasoning. You can also add some tomato paste and red pepper flakes if you want, but that’s optional. It doesn’t get fresher or more simple!

HOW TO MAKE ROASTED TOMATO SOUP

- Heat your oven to 400F degrees.
- Combine tomatoes, onion and garlic cloves in a baking dish. You can use any kind of tomatoes that you love. I personally prefer vine-ripened, but I’ve made this with several different kinds.
- Add salt, pepper and olive oil to your veggies.
- Mix everything together, so it’s well coated and evenly spread out in your baking dish.
- Roast the veggies for about 45 minutes, until the edges are nice and brown. You want that blackened look – that’s where all that depth of flavor comes in when they caramelize!
- Once they’re finished roasting, remove your dish from the oven and transfer the roasted veggies to a 2 quart saucepan or dutch oven. Make sure you get every bit of veggies and ounce of juice – you want as much flavor in your soup as possible.
- Add the chicken stock to the saucepan with the tomato mixture. You can also use vegetable stock and I’ve even used beef stock in a pinch – it’s also rich and delicious.
- Add crushed red pepper flakes to the soup if desired. This adds some extra kick that is really delicious!
- Add some tomato paste if desired as well – this adds even more flavor and will thicken your soup a little bit.
- Puree everything until desired smoothness with a hand blender. I prefer it as smooth as possible for a velvety finish. If you don’t have one, you can put it in a blender and then transfer your mixture to your saucepan.
- Simmer the soup on low for about 10-15 minutes.
- Add extra salt and pepper to taste, if desired. I like a lot of salt, so I typically add more!
- Serve hot, top with more cracked pepper if desired, and add a garnish such as fresh basil, parsley or freshly grated parmesan cheese if you like.
- Enjoy with crusty bread, crackers, croutons or grilled cheese…yum!


Easy Roasted Tomato Soup
Oven roasted tomatoes, onion and garlic create a robust, flavorful soup.
Ingredients
- 1.5 – 2 pounds vine ripe tomatoes or any of your favorite kind!
- 1 medium onion rough chopped in large chunks
- 8 cloves fresh garlic peeled
- 3 tbsp olive oil extra virgin preferably
- 2 tsps salt
- 1/4 tsp cracked black pepper
- 2 cups chicken stock
- 1/8 tsp crushed red pepper flakes optional
- 1 tbsp tomato paste to thicken, if desired
Instructions
