Traditional Cream of Broccoli Soup

A delicious and simple traditional cream of broccoli soup everyone will love!

  • 4 cups broccoli florets
  • 3 cups chicken stock (or enough to cover broccoli)
  • 1 garlic clove minced
  • 1 medium onion diced
  • 1 tbsp olive oil extra virgin
  • 1/4 cup heavy or whipping cream
  • 1 salt and pepper to taste


  1. Over medium heat, add olive oil, diced onion and minced garlic clove. 

  2. Cook until onion is tender, about 5-10 minutes. 

  3. Add the remainder of the ingredients, except the cream. 

  4. Bring to a boil, then simmer for 10 minutes. 

  5. Once the broccoli is cooked, add the cream and simmer for another 5 minutes. 

  6. Puree with a hand mixer until smooth, about 3 - 5 minutes. 

  7. Add more cream for desired thickness. 

  8. Serve with grated sharp cheddar, bacon bits and fresh cracked pepper.
