A delicious and simple traditional cream of broccoli soup everyone will love!
Over medium heat, add olive oil, diced onion and minced garlic clove.
Cook until onion is tender, about 5-10 minutes.
Add the remainder of the ingredients, except the cream.
Bring to a boil, then simmer for 10 minutes.
Once the broccoli is cooked, add the cream and simmer for another 5 minutes.
Puree with a hand mixer until smooth, about 3 - 5 minutes.
Add more cream for desired thickness.
Serve with grated sharp cheddar, bacon bits and fresh cracked pepper.
