CHOCOLATE CHIP SHORTBREAD CHRISTMAS COOKIES

Today I have such a treat for you! I’m sharing the most delicious and simple chocolate chip shortbread cookies ever. These are dangerous though, you’ll be eating them all holiday long. Some of my other favorite Christmas treats are my mama’s frosted Christmas sugar cookies, and these dark chocolate peppermint chow mien clusters. You’ll want to save them in your baking repertoire.

We can never get enough of these cookies in our home. My Chocolate Chip Shortbread Cookies are seriously to die for.

My sister gave me this recipe years ago and I make them together with our kids every Christmas.christmas-shortbread-cookie-recipe11

Our daughter especially loves  baking and she’s my helper today. She actually did most of the baking by herself, she’s really good!christmas-shortbread-cookie-recipeThese cookies are quite quick to make and are the perfect balance of salty and sweet, one of my favorite combos. Since this is a simple shortbread recipe, everything goes in the mixer at once – so simple.

When you’re rolling the dough, make sure to work it quickly in your hands so it doesn’t get too warm.christmas-shortbread-cookie-recipe3Space the dough balls evenly apart on your cookie sheets.

Use the bottom of a glass, dipped in flour,  and gently press each dough ball. You want to avoid pressing too firmly, to keep the dough from sticking to the glass.

Continue these steps, dipping the glass in flour and pressing the cookies.
christmas-shortbread-cookie-recipe6 After 8-10  minutes at 350F you’ll have perfect cookies. They get overdone quickly so be careful!

I have a gas oven, which may cook faster than electric – you might want underbake the first tray, just to test.christmas-shortbread-cookie-recipe9

CHOCOLATE CHIP SHORTBREAD CHRISTMAS COOKIES

Delicious, salty-sweet chocolate chip shortbread cookies

Ingredients

  • 2 1/4 Cups White Flour
  • 1 1/4 Cups Butter, room temperature
  • 1 Cup Confectioner's Sugar
  • 1/2 Tsp Salt
  • 2 Tsp Vanilla Extract
  • 1 1/2 Cups Chocolate Chips I prefer using mini chocolate chips

Instructions

  1. Heat oven to 350F

  2. Combine flour, butter, sugar and salt in mixer, using the paddle attachment

  3. Add vanilla, mix well

  4. Add chocolate chips, mix well

  5. Roll dough into balls

  6. Space evenly, about 2 inches apart on ungreased cookie sheets

  7. Using a glass, press the first dough ball with the bottom of the glass

  8. Dip the glass in flour to avoid sticking

  9. Continue to press each dough ball

  10. Bake for 8-10 minutes

We also whipped up some mini cupcakes and decorated them with the cutest little Christmas decorating kit I picked up. How adorable are these guys?! So fun for the kids.chirstmas-cupcakes-decoratedchirstmas-cupcakes-decorated2

These chocolate chip shortbread cookies are light and crisp and buttery… sooooo good!
